Perfect for breakfast, a midday snack, or a light dessert, this parfait brings together the brightness of spring citrus, the coolness of mint, and the creamy goodness of Greek yogurt. It’s easy enough to whip up with family, friends, or fellow residents for a fun group activity!

Spring Citrus & Mint Yogurt Parfait Recipe

Ingredients:

- 1 cup plain or vanilla Greek yogurt
- 1/2 grapefruit, peeled and segmented
- 1/2 orange, peeled and segmented
- 1/4 cup pomegranate seeds
- 1 tablespoon fresh mint leaves, chopped
- 1/4 cup granola
- Drizzle of honey (optional)

Instructions:

1. In a clear glass or bowl, layer half of the Greek yogurt.
2. Add a layer of citrus segments and pomegranate seeds.
3. Sprinkle some mint and granola.
4. Repeat the layers and finish with a drizzle of honey.
5. Garnish with a whole mint leaf for a fresh touch.
